Sweet Potato Cobbler Recipe

Just finished a bowl of my wife's Sweet Potato Cobbler. Had to post the recipe as I'm sure there's folks around the country that haven't even heard of it.

1 stick butter
1-1/2 cups self rising flour
2 cups water
1/2 cup shortening
2 cups chopped sweet potatoes
1/2 cup milk
2 cups sugar
1 partridge in a pear tree

In a saucepan simmer potatoes and water until tender. Drain; reserve water. Add more water to make 2 cups; add sugar. Set aside. Melt butter in a 3-quart baking dish. Cut shortening into flour; add milk and stir only until dough leaves the side of the bowl. Place potatoes in pan with melted butter. Spoon crust onto potatoes. Pour sugar water slowly over crust. Bake 60 minutes at 350 degrees.

If you've never eaten sweet potato cobbler you haven't lived!! good gracious

Thanks Knucks. I'll try it tomorrow. Bet it goes good with ham and some greens. We got power back this evening so the oven works again.

AMG ham and greens..Johnlee you are killing me here..in TN Prision sys they want let us have any bone-meat..but im suppose to get out next week..Bigbooneer sent me a hack-sawand Don sent me a Ladygaga sent me a credit card to buy the tobacco from them

One of my favorite ways to "do" sweet potatoes is to bake them, peal them and slice into lengthwise slices and fry them in peanut oil. It will make your tongue slap around your mouth, its so happy :)

I concur! but being a little to the north of you I use butter, goober pea oil is too expensive. I'm going to try the cobbler later this week.

THat looks really great! I'll see if I can get my mother to share my great-grandmother's sweet potato pudding recipe. If you like the cobbler, you'd like that as well. It really is incredibly good. It isn't a pudding like "jello pudding" or anything like that - it contains flour and is baked.

I found a farmer last year who grows the old fashioned (heirloom, I think) small, pale yellow sweet potatoes. They are not as sweet as the ones eastern NC is famous for (the ones you usually see in stores), with their high sugar content, deep amber orange/brown flesh and reddish skin. THe old fashioned yellow ones are fantastic baked, just topped with butter and salt. The sweetness is very subtle and they really taste more savory than sweet. I'm looking forward to growing some soon.

OK Knucklehead I'm confused, you call out 1/2 cup of milk twice and 1-1/2 cups of flour twice as well as shortening twice.. Is the total 1 cup milk and 3 cups flour or did you add extra stuff by accident?

Not at all, really. Banana pudding a custard. This is baked, more like a cake, but is only medium firm... hard to describe. She may not part with the recipe, and I don't know it. If not, I'll see if I can find something similar online.

Shit fire and piss matches!! I double added. When I wrote the original post I had two columns of ingredients and when I "glanced" at it after posting I just saw one column. I thought the second column got left off instead of scrunched up with the first. Then when I went to "fix" the dad gum thing I copied and pasted the one column to save time. Are you following me? OK one more for the road---

1 possum
1 onion
1 clove garlic
clarified butter
olive oil (enough to brown meat without becoming dry)
1 cup dry red wine
flat or field mushroom, sliced (big meaty ones)
2 tablespoons fresh herbs (a mix of rosemary, thyme, marjoram, dill and parsley)
1 tablespoon tomato puree
1 cup dark beer, eg black mac,monteiths
1 cup brown possum stock
1 tablespoon marsala

This is too much. I ought to get some more green dots for the hazing. I'm just minding my own business when WHAM! right out of nowhere! Substitute one FmGrowit for the possum and it would make a good coyote bait. What a varmint.
