Maybe I need to just take my fermented leaves dry them to about 20% and then crumble and soak in Monster. Would it mould with all of the sugars? Would I need to add baking soda to raise the Ph

It will mold with all the sugars. If you make it real moist you can divide the batch up and store most of it in the freezer. When I make a real moist batch I will let it set out on the counter for 2 or 3 days till it is fairly dry. As soon as I put it in my mouth it is nice and moist again.

Dip coffee grounds? How bout goin backwards and infuse some coffee with tobacco? Not that I would but if that's nearer yer goal.... instead of red bull or monster how bout one of them energy shots? They're pretty concentrated. It's not a strange concept, I've seen "energy dip" at the gas station lol.
