Very interesting thread ... now I have yet another project.

I've made Sauerkraut before and am familiar with the concepts involved so this should be fun.

Thanks to all the contributors on this thread! :)

It may look similar to sauerkraut, but the intrinsic elements of sauerkraut are lactobacillus, aerobic, acidity and salinity.

There is neither oxygen, salt, nor acid in perique.

After "lactobacillus" it should say "anaerobic", I believe. To be specific, facultative.

This idea of keeping the leaf pressed below the water line to create the anaerobic environment is what I was referring to.

Aha, my bad on the facultative anaerobic.
