that's the good question. you'd figure, in the tapered end on an even bunch it makes sense but, ... his back filling sets the draw at the tuck cuts and, it's easier to pull some out if it's under. it seems the first rotated head area didn't take and he reaches for the tweezers (and out of frame) fulls some out of the head area and forces it up into the mold here @ 35:15 > http://youtu.be/mooPe5w4x9Y?t=35m2s but I have not asked.

At 34:54, he identifies an issue right after he trims the foot. The next second, he's using tweezers to pull out what looks like a piece of mid-rib.

I think it just a quality control thing.

Thanks, Marc. Sr. Vasquez demonstrates how simple it is to actually bunch the filler. Also, the double binder always helps tremendously in getting a smooth contour, when rolling without a mold.
