I've grown some Perique (varietal) to turn into Perique (processed). Is there any benefit to kilning this or just start fermenting it when its colour cured?
Just begin after color-curing. You can even frogleg leaf that has mostly color-cured, but the stems are still green. I've made Perique from kilned leaf, and I don't think it makes a difference.
