Homemade bread requires actual "bread flour", which is higher in gluten than "all purpose flour", and is capable of holding together through the stress of expanding gas bubbles from the yeast.
My only regret is that, having baked it late this afternoon, I've already consumed fully 1/2 of the loaf.
