ageing in jars?

I'm not sure of the chemical processes going on in the leaf as it ages. I know aging improves the flavor and is a continuation of the fermentation process. Several members store in jars and have reported that the aging process has continued during storage, and the leaf has improved in taste and mildness. If the leaf gets completely dry, the aging process will stop until the leaf is rehydrated, then the aging continues. So, although I can't tell you why it works, I can say that reports indicate that it does work.
