Let the whole inflorescence (flower bunch) turn brown and completely dry. Then cut the tops off all the seed pods and shake the whole thing into a paper bag. Pour out the seeds and store in an airtight container.

Seeds are alive, and though their metabolism is slow, vacuum sealing or storing in nitrogen would likely shorten their viability.

Studies in areas of India that have no ready electricity (i.e. no refrigeration) have demonstrated that assuring that the seed is well dried will ensure viability for 10 or more years. This is regardless of storage temperature.

Ah. The hazard of editing a post. My comment is singularly focused on the dirty bath water. The ham hock looks wonderful and delicious.

When I use any dried beans, I pour the dry bean into my hand slowly, and pick out the bean-sized clumps of field dirt that often accompany them. I would guess that if you used a meter of some kind to measure the available N : P : K of that rinse water, it would not be impressive.

When will the ham hock and beans be ready to serve?

Tomorrow at dinner time. I will soak the beans for 12hr, then pressure cook for 15min, then bake for 8hr.

If the blech was aimed at the pork, I was primed and ready with a photo of the tofu I'm currently frying.
