Forecasting a hard freeze later this week, so the wife and I went ahead and harvested what we could. She picked about a gallon of string beans and has them portioned out and stashed in the freezer. I picked a massive amount of peppers and green tomatoes. I’ll see if I can get them (maters) to ripen in a box with a banana. Haven’t decided what to do with the peppers yet.
Done! I grind a cup of the course dried peppers at a time for chili powder. I use a dedicated LABLED coffee grinder. (You only make that mistake once!)
The jars on the right are my fermented hot sauce. Blend fresh peppers with beer, add tsp of yeast and tsp of sugar, burp jars every day for a week, then add a Tbsp of salt and 1/4 cup vinegar to preserve. Run through a sieve to remove seeds.
Today is this year’s winter solstice - the shortest day / longest night of 2023. And that means that it’s time to start planning next year’s grow! Tobacco, vegetables, fruits, herbs, and flowers.
