How does the alkali used affect the final product?

I'm gathering the stuff I need to make my own snus, and the three alkalis I've seen mentioned are sodium, potassium, and ammonium carbonate. Apparently, the latter is used in place of the two former in baking, so that there's no salty flavour. I don't really know that from my own experience, have never used it for anything at all.

So, my questions are:

How does the flavour of the final product differ among the three?
Does the amount of alkali needed change depending on which is used?
Is the nicotine strength affected by which is used?
Can you use ammonium carbonate by itself?

I can't give you any comparisons. I do recommend that if you have never made it to try a small batch with what you have available.

I make batches with sodium carbonate because I have it at home, and when I am out I can quickly make it by raiding the kitchen cupboard. The snus turns out really good. Nicotine levels are plentiful. Salt flavor is controlled by how much sodium chloride I added to the recipe. When young, there is plenty of that snus can ammonia aroma.
