Looking for some basic info for making dip

First off this year I have grown some Havana and Virginia gold in my back yard. To late now but for next years sake what do you think is the best kind to make dip. I’m looking to get something close to copenhagen mint/Grizzly mint.

Second: what is the best curing process for making dip. I just did my first harvest last week and have it curing in my basement hanging from the ceiling now with windows open and fan blowing down there. It is fairly humid out. I also have about 15 leaves hanging in my mini and I mean real mini green House outside. I heard that it is a fairly efficient way to cure. Is there any specific way to cure/ferment to make the best dip?
