Problem with shiraz ripening

Hi everyone !

It's the first year I grow the Shiraz strain, and something quite strange happen.
They have been flowering for a good 3 weeks, and not even the lover leaves have began to yellow, not even a sign of color changing !

Usually plant grown in pot tend to ripe much earlier than them in real soil, but here, it's not the case, despite 3 weeks of flowering, still no sign of ripening.
I have stoppen the nitrogen input more than a month ago, but maybe the potting soil I prepared was too rich ?
I have a fertilizer which contain only phosphoru and potassium, could it help ?

I treally don't know what to do, and it's frustrating, because I'm very curious about what this strain could give !
