Just made my first batch of los a couple days ago. Found some instructions re: instant pot snus. Pretty easy to follow. Made snus, packed it up, stuffed in fridge. Then, I went back and read:

14. Package in container. The snus will develop a more mild flavor as ammonium gas is released. The entire off-gassing process finishes after a week; the container should have a loose lid or opened every so often to allow the gasses to escape – however, the snus is done at this point, and can be used as soon as it’s chilled.

So, was I supposed to put it in the fridge right away, or leave at room temp for off-gassing for a week, then fridge?

I always put mine in the fridge directly after alkalizing, open it up every few days and give it a good stir. It's usable after a week but it won't be at its best until after 3 weeks or so in the fridge.
