Xanthan gum as glue?

I tasted my Pectin powder last night. It is made by Ball (the Mason Jar manufacturer) I tasted a slight citrus flavor, possibly due to the citric acid in the ingredients. It wasn't a bitter or unpleasant taste, but it definitely had a slight citrus taste, rather than being tasteless. I've never tasted this flavor when smoking my cigars. I tasted the straight powder, rather than the diluted mixture.

When the powder is mixed with water it releases the army of bitterness.

Even if it didn't taste bitter and only had a slight citrus flavor (which to me is tangy) if I had a choice between using one or the other the choice is easy. I'm going flavorless to make sure the wonderful flavors of Don's tobacco shines through without any added artifacts.
