Am also going to install a $15 hotwater heater thermostat, set at 130 degrees cutoff, in front of all the other controls, crockpots and fans, just for the peace of mind factor.

You might want to set that T-stat at more like 120 degrees. They typically have a tolerance of about +/- 10 degrees. At 130 degrees your kiln could get to 140 degrees which might /might not negatively effect your tobacco. I kiln at 115 degrees.
