I've got a bunch of hand rolled sticks I got at a liquidation sale. I have know idea what they are made from, but the ones I've smoked were pretty good.

Is the cheese home made or from a farm near you? The Colby sounds good, but what do you do with curd?

it is cheese from a local cheese plant. Lots of cheese is made nearby. Cheese curds are available locally and are really good'

Well, things being what they are, I'm generating more curds n' whey than I can consume...
When you learn how to make the limburger, would you post a thread ???

Took it to the post office, but the line was out the door, so I turned on my heel. Will try again tomorrow.

Today Bearswatter called me at work to report a package of cheese arrived. Called me back ten minutes later, to exclaim

"OH

MY

GOD!"

She had plundered the package and is now a superfan.

I hit some of those curds and they are delectable.

Cheese arrived with a catalog. This is going to cost me money. Judging from what we've tried,we've got to score some more.

Bearswatter still marveling over those cheese curds. I see some internet purchases in her future. Good stuff.

Bearswatter sounds like a Patrick F. McManus character. Like Rancid Crabtree, Retch Sweeney, and the dog, Strange. Good stuff.
