I have the walk in already done but need some help on the control system.
I think it is 8x14 or 16
Any takers, I just can't be there to monitor it at night or weekends.

Those security camera systems you can monitor live from your cell phone are getting less expensive. And then there are the light switches that you can turn on/off remotely from your phone. Maybe a combonation of the two?

You don't have to be if you spend some time you can work out a schedule to change setting at 8 - 10 hrs if you need to be away. I'm not using my pc at all.

I was really hoping the pc/automated/7 days set and forget would be perfection. Us little guys need 98% of a 50lb run to be good. Not 85% of 10,000 lb with the other 15% being considered "acceptable loses". I

He's right on. I've been using the 8, 12, & 10 times to adjust. I'm only looking for something to run the freezer to learn it's quriks before the big box next year.

I've always air cured mine. This year I air cured the cigar leaf and the chewing bacca, but i'm flue curing the flue varieties.
