Just got some seeds to sprout and now I'm afraid I've let them dry out too much. I was trying to avoid damping off in this humid FL weather. I'm guessing it's just too hot for them because I closed the cover while it rained and come back out to dying leaves. Still got plenty of survivors for what I need though.

Doing much better. I wonder when I should transplant? Started watering from the bottom of a bucket about once a day.

If you are talking about transplanting in the ground, they are way too small for that.
If you want only a small number of plants, you could let one good healthy seedling in each cut and remove the others, this way they will be able to grow to a good size before they go in the ground.

Are the big enough to transplant to their own cups?

Yes. You can do that as soon as a tiny white radicle first emerges from the seed. If you have forceps, then plunge them to either side of a seedling, enabling you to lift a bit of soil out with the root, then transfer to the new container. Without forceps, I would wait for the largest leaves to reach the size of a dime, then moisten the soil, and pluck one out by that pair of leaves. If your germination is mostly complete, you can dump the contents into a shallow dish of water, and easily separate each of the seedlings.

Getting bigger. Some more than others. Not sure what to even do at this point

Keep them happy. When they are 6" tall or so, transplant them to the ground.
